La Torre alle Tolfe is an historic, organic wine and olive oil estate located 3km outside Siena, Tuscany. The Le Tolfe Villa houses up to 35 guests.

6 months - from May 1st to October 30th 2019

 

About the position:

La Torre alle Tolfe is seeking an energetic thoughful and talented Chef with experience in an Italian kitchen and sensitivity to seasonal local ingredients and an orgenised, client friendly fron of house for a fixed six month contract. This unique opportunity offers a dynamic couple or doule act act the chance to live in apartment in the ancient borgo of Le Tolfe and have full charge of the Villa kitchen. Candidates will be responsible for preparing creative menus to suit a broad selection of clients ranging from music and wellbeing retreats to weddings, courses and private gatherings.

The successful candidates will be able to nurture and develop the orto and herb garden, harvesting the produce daily to be used in the kitchen and when the time is right, preserving the best of the harvest for the months ahead.

Working an average of 5.5 days per week, the position comes with access to a car, a private serviced apartment (including expenses) and access to a shared pool. Salary details upon application.

The idel candidates will have:

  • An insatiable passion for Italian food and ingredients
  • Client sensitive outlook
  • Organised, trustworthy, friendly and open personalities
  • Fluent English and basic Italian a benefit
  • Full, clean driving license

 Responsibilities includes:

In the kitche:

  • Baking of bread and cakes as well as preparation of granola and tisane for breakfast
  • Preparation of invigorating buffet styel lunches
  • Creation of 4 course dinner menus
  • Creation of 6 celebratory wedding dinners over the summer months
  • Pizza making in an outdoor wood-fired oven
  • Preparing aperitifs, stocking the larder, and utilising moments when no clients are present to prepare ahead 

Out of the Kitchen:

  • Full management of the orto
  • Preserving surplus fruit an vegetables as the season dictates
  • Service support during lunches and dinners
  • Client Liaison: meeting and greeting Villa guests, being on hand for enquiries
